TRS Javentry Mace is the lace-like, dried covering of nutmegs. It has a sweet, mild nutmeg flavour and imparts an orange, saffron colour to dishes. A small amount adds fragrance and subtle flavour, particularly to custards and cream sauces, as well as curries and pickles.

Mace is the spice made from the reddish seed covering (aril) of the nutmeg seed. Its flavour is similar to nutmeg but more delicate; it is used to flavour baked goods, meat, fish, vegetables and in preserving and pickling.
